Ingredient
600g tenderlorin pork
2 spring onions, chopped
1/2 orange, sliced
2 tablespoons each of flour and oil
3 tablespoons butter
1 1/2 cups fresh orange juice
1 cup water
Seasoning
1 teaspoon salt
a dash of pepper
Spices:
1 1/2 teaspoon tarragon
1/2 teaspoon thyme
1/2 teaspoon black pepper
a dash of rosemary
Method
Wash the whole pork clean, mix well with seasonings and apply flour thinly onto it.
Heating oil, shallow-fry the pork of (1) until its surface turns browns, take it out, wash the pan clear, add 2 tablespoons of water and boil the pork until cooked.
Heating butter, fry onion until change colour slightly, add the sauce of (2), orange juice and 1 cup water in and bring to boil.
Add the pork, put spices in, boil the pork for 15 to 20 minutes, take out, cut into pieces, put back in the pan to boil for 20 minutes more and season them with a dash each of salt and pepper.
Serve the pork chops with the sauce and garnish with orange slices.
