Ingredient
1 lobster (about 600g)
2 tbsps diced ginger
2 tsps grated garlic
2 cloves shallots
1/2 cup stock
1 tbsp caltrop starch
1 tbsp Shaoxing wine
1 fried dried noodles
Spring onion (sectioned)
Seasoning
2 tsps light soy sauce
1/4 tsp salt
1/2 tsp sugar
some pepper and sesame oil
Method
Gut and dress the lobster. Wash well and cut it into pieces. Sprinkle caltrop starch. Cut the shallots into fine shreds.
Cook the noodles in water for a moment. Drain. Stir fry with a little oil briefly. Put it onto a serving plate
Deep fry the lobster pieces in warm oil. Drain and set aside.
Heat 1 tbsp of oil. Stir fry ginger, garlic and shallot until fragrant. Put in fried lobster pieces. Stir fry. Sprinkle wine.
Pour in stock and seasoning. Cover the lid and cook for 5 minutes until the sauce reduces. Add spring onion and stir well. Pour the lobster and sauce on the bed of fried noodles. Serve.
