Ingredient
100g geoduck
10g Zhu Sheng
1 tbsp shredded Jinhua ham
1 tbsp shredded spring onion
1/4 pack enokitake mushrooms
1/3 bunch mung bean thread
3 cups stock
2 tsps Shaoxing wine
sliced ginger
2 tbsps shredded carrot
Seasoning
1/2 tsp salt
1 tsp light soy sauce
sesame oil, pepper
Method
Soak Zhu Sheng in water for moment. Cut off the stalks and roots. Scald and wash well. Cut into long strips.
Shell the geoduck with a sharp knife. Discard the black part and innards. Wash and slice thinly.
Heat some oil in a wok. Add ginger slices and stir fry briefly. Add enokitake mushrooms, Zhu Sheng and carrot shreds. Stir fry to mix well. Sprinkle a little wine. Pour into stock and bring to the boil.
Add mung bean thread and seasoning. Stir fry further. Finally add sliced geoduck and bring to the boil. Save in a serving soup pot. Sprinkle shredded ham and shredded spring onion on top. Serve.
