Ingredient
Eel (sliced) 6 taels
Bread crumbs 2 taels
Egg yolks 2
Seasoning
Corn starch 1 tbsp
Sesame oil 1 tsp
Chicken powder 1/4 tsp
Pepper 1/4 tsp
Salt 1/4 tsp
Bean sauce as desired
Sauce
Dipping sauce:
Bean sauce 2 tsp
Soy (Tou Chou) 1 tsp
Crushed garlic 1/2 tsp
Chopped shallot 1/2 tsp
Sugar 1/4 tsp
Thickening:
Corn starch 1/2 tsp
Method
Crispy eel:
Beat egg yolk and seasonings.
Dip eel in egg wash and coat with bread crumbs.
Deep fry in hot-and-warm oil until golden brown. Serve with dipping sauce.
Dipping sauce:
Saute garlic, shallot and bean sauce. Add sugar, soy and water. Thicken with corn starch solution, stir well.
