Ingredient
400g spare ribs
2 sour plum
1 stalk spring onion (cut finely)
1/2 red bell pepper (cut into thin strips)
Seasoning
1 tsp Shao Xing wine
1 tsp light soy sauce
1 tsp red vinegar
20g rock sugar
1/4 tsp salt
Sauce
Marinade:
1 tbsp light soy sauce
1 tsp sugar
2 tsp rice wine
Method
Mash sour plum. Mix with marinade ingredients and spare ribs. Leave it for 1 hour.
Deep fry spare ribs in boiling hot oil till medium rare (80% done). Dish up.
Heat up 1 tbsp oil. Add seasoning and cook til rock sugar melts. Add spare ribs and stir till sauce thickens. Add spring onion and red bell pepper strips. Serve.
