Ingredient
200g mini oysters
30g pickled radish (diced)
2 eggs (beaten)
2 tbsp sweet potato starch
1 stalk spring onion (cut finely)
3 stalks coriander (cut finely)
Seasoning
1/4 tsp salt
1/4 tsp sugar
1/4 tsp fish sauce
Pepper to taste
Method
Rinse mini oysters. Mix well with 2 tbsp corn starch and some salt. Rinse and drain.
Mix mini oysters with pickled radish, spring onion, coriander and seasoning. Sift in sweet potato starch. Add beaten eggs and mix well to form batter.
Heat up 1/2 cup oil. Pour oyster batter into frying pan and deep fry over low heat till one side turn golden. Turn it over and deep fyr the other side till golden brown. Dish up. Sprinkle coriander on top. Serve.
