Ingredient
900g lotus root
450g shin of beef
8 water chestnuts
3 slices ginger
1/3 piece dried tangerine peel
salt a pinch
Method
Wash lotus root. Cut into pieces. Peel.
Peel water chestnuts and wash. Soak dried tangerine peel in water until tender and remove pith.
Blanch shin of beef. Rinse and drain.
Bring suitable amount of water to the boil with dried tangerine peel. Put in all ingredients and boil for 10 minutes. Turn to low heat and cook for 3 hours until beef is tender. Season with salt.
