Ingredient
225g pig's liver
5 egg whites
1 egg yolk
1/2 tbsp minced ham
3 cups stock
Chinese parsley
Seasoning
1/2 tsp salt
2 tsps wine
sesame oil as desired
pepper as desired
1 cup stock
Method
Wash, slice and then mince pig's liver. Put through strainer and discard residue. Mix it with egg whites, egg yolk and seasoning. Pour mixture into a greased bowl. Steam for 10 minutes.
Boil stock and pour into bowl. Add in whole piece of steamed liver custard. Scatter with ham and Chinese parsley. Serve.
