Ingredient
1 guinea fowl
255g shin of pork
38g fox nuts
38g lotus seeds
19g Huai Shan
1 tbsp dried longan
2 slices ginger
salt
Method
Cut guinea fowl. Rub beak and bottom with crude salt. Wash. Blanch guinea fowl and shin of pork. Rinse.
Wash lotus seeds, fox nuts, Huai Shan and longan.
Bring suitable amount of water to the boil. Put in all ingredients. Boil for 10 minutes. Turn to low heat and cook for 3 hours. Season with salt. Serve.
